Quinoa and fruit pudding

6-8 servings

In medium large pot:

simmer gently, covered, about 20 min., until almost done:
2 cups water
1 cup white quinoa, rinsed

add, and simmer about 10 min. (uncovered, stirring every few minutes):
2 cups soy milk (unsweetened, vanilla or plain)
2-4 T maple syrup
3/4 tsp. ground cardamon
3/4 tsp. ground anise seed
1/4 cup toasted pumpkin seeds
1/4 cup walnuts, chopped, small pieces
1/4 cup (softened) dry figs, small pieces
1/4 cup (softened) dry pitted dates, cut in small pieces, check for pits
(1 tsp. vanilla if using plain soy milk)

after about 5 minutes of the cooking, add:
1/4 to 1/2 cup frozen or fresh peaches or mangoes, small pieces
and/or 1/4 cup frozen, unsweetened cranberries

Add more soy milk or water for desired thickness.

Refrigerate leftovers (in covered glass container); reheat in microwave or stove top with some liquid to soften and thin out.
