Mushroom soup


In a medium size pot, sauté for about 8 minutes:

1 T. olive oil
1/2 lb. sliced white mushrooms
1 small yellow onion, diced

Add, and sauté 1 minute:

1 clove minced garlic
1/2 tsp. Herbamare (or another powdered soup stock)
3/4 tsp. rice vinegar
1/2 tsp. dried thyme
1/4 tsp. paprika
1/4 tsp. dried tarragon
1/4 tsp. black pepper
pinch celery salt

Have this ready to add to the soup pot....

In a small bowl, combine:
2 T. cornstarch
1/2 cup water

Add:
1 1/2 cup plain soy milk


Pour mixture into the soup pot, and simmer for about 5 minutes.
