Mango chutney

Gently simmer, until liquid is mostly evaporated:

– 1 cup MANGO pieces (fresh or frozen)
– 1/4 cup chopped RED ONION
– 1/6 cup GOLDEN RAISINS
– 3 T. LIGHT BROWN SUGAR
– 1 1/2 T. WHITE VINEGAR
– 1 1/2 tsp. finely grated FRESH GINGER
– 1/2 tsp. ground CUMIN
– 1/4 tsp. CINNAMON
– pinch of CELERY SALT
– zest of one ORANGE

Let cool slightly.
Using a hand blender, partly purée, allowing some small chunks to remain
Then stir in:

– 1 1/2 T. finely chopped fresh mint

Chill.
(Good with vegetable biryani.)

Store in refrigerator.
