Ketchup

Yield: 3/4 cup


1 can (5.5 fl. oz) tomato paste (this equals 1/2 cup plus 2 T.)
1/2 cup water
1/4 cup white vinegar
1 T. honey
3 T. brown sugar
1 1/2 tsp. onion powder
a few twists of freshly ground black pepper
1 tsp. garlic powder

(optional: 1/8 tsp. sweet smoked paprika, or other seasoning. Try the basic recipe first, to see if you want to experiment with other herbs or spices.)

Combine everything in a medium size saucepan.

Simmer (on the lowest heat possible, to prevent splattering), stirring occasionally, 10 to 15 minutes, until thickened.

Remove from heat, let cool for about 5 minutes, then taste to see if it needs any salt. Depending on sodium content of tomato paste, you may not need to add any.

Transfer to glass jar, and keep refrigerated.
