Beet loaf (or burgers)

Approximately 6 to 8 servings


LOAF
Form into a lightly greased baking dish; loaf size or a bit larger.
Cover loosely with aluminum foil.

Bake 350 deg. F. oven, for about 30 minutes, until thoroughly heated and slightly dry (but don't overbake, or it will be too dry). Remove foil for approx. the last 5 minutes to make the top a bit crispy.


BURGERS
Form into patties (6 to 8 burgers).

Bake: as above, but for less time (approx. 20 minutes in total). Flip burgers after about 10 minutes.

Stove top: in a lightly greased pan (use canola or veg. oil), cook burgers in batches (leave some space around each burger, to be able to flip them).
Cook on low-medium heat, covered.
About 5-7 min. on each side, until browned. Remove burgers and allow to cool for a few minutes. They will become slightly more firm as they cool.

In a med.-size pot, cover and simmer until water fully absorbed,
about 30 minutes:

3/4 cup dry BROWN LENTILS
1 1/2 cups WATER

When water fully absorbed, remove from heat.
Remove the lid and let the steam evaporate.
Partly mash with an immersion blender.

While the lentils are simmering, in a pan, sauté on med. heat, about 4 minutes:

1 T. OLIVE OIL
1 cup fincely minced yellow ONION
3 to 4 minced GARLIC CLOVES

Add, and cook for a few more minutes:
1/3 cup raw WALNUTS finely chopped

Remove pan from heat, and let cool slightly.
Set aside.

In a medium large mixing bowl, combine:

1/2 cup (packed) fresh RED BEETS, peeled abd finely grated
4 T. KETCHUP
2 T. TAMARI
6 or 7 twists (to taste) freshly ground BLACK PEPPER (approx. 1/4 tsp.)
1/4 tsp. SWEET SMOKED PAPRIKA
1/2 cup quick-cooking ROLLED OATS
1 T. unbleached all-purpose FLOUR

Blend in the onion/garlic/walnut mixture.

Using an immersion blender, blend, but don't purée entirely (to retain some texture).
Or, put everything in a regular blender, and process the same way.

The mixture should be moist but not sticky. Burger patties should easily hold together. If the batter is too moist, mix in thoroughly a bit more rolled oats, and let sit about 10 minutes, to firm up, before forming into patties.
