1) In a medium large pot,
sauté till tender:
- 1 T. olive oil
- 1
large onion, chopped in med. small
pieces
2) Add, and stir for 1 minute:
- 2 garlic cloves, crushed
- 1 tsp.
fresh ginger, minced
- 1/4
tsp. garam masala
- 2 tsp.
curry powder
- 1 carrot, chopped in small pieces
3) Add, and simmer for about 8 minutes
(until broth completely absorbed and lentils are mushy):
- 3 cups
veg. broth
- 1 3/4
cups red lentils, rinsed
Eat as is, (warmed is nice), or with nan or pita
bread,
fresh coriander leaves and yogurt sauce.

Yogurt sauce
Combine:
- about 3/4 cup plain
yogurt
- about 1 T fresh
lime juice
- 1 green
onion, minced
